Smoked Salmon Scrambled Eggs
Ingredients
- 1 t coconut oil or bacon grease lard, or tallow
- 2 large eggs
- 2 egg yolks
- 1 T water
- 4 oz smoked salmon sliced or broken into small pieces
- ¼ t black pepper freshly ground to taste
- ½ medium avocado
- 1 T fresh chives minced or green onion, thinly sliced
Instructions
- Heat a medium skillet over medium heat and add the coconut oil to the pan when hot.
- Meanwhile, crack the eggs into a small bowl. Add the water, and scramble with a fork.
- Add the eggs to the hot skillet, along with the smoked salmon. Stirring continuously, cook the eggs until soft and fluffy.
- Remove from the heat. Top with black pepper, avocado, and chives to serve.
