Smoked Salmon Scrambled Eggs

Ingredients
  

  • 1 t coconut oil or bacon grease lard, or tallow
  • 2 large eggs
  • 2 egg yolks
  • 1 T water
  • 4 oz smoked salmon sliced or broken into small pieces
  • ¼ t black pepper freshly ground to taste
  • ½ medium avocado
  • 1 T fresh chives minced or green onion, thinly sliced

Instructions
 

  • Heat a medium skillet over medium heat and add the coconut oil to the pan when hot.
  • Meanwhile, crack the eggs into a small bowl. Add the water, and scramble with a fork.
  • Add the eggs to the hot skillet, along with the smoked salmon. Stirring continuously, cook the eggs until soft and fluffy.
  • Remove from the heat. Top with black pepper, avocado, and chives to serve.
