Coconut Granola
Ingredients
- ¼ cup coconut oil melted
- 1 t vanilla stevia liquid
- ½ cup chopped almonds
- ½ cup chopped pecans
- ½ cup chopped cashews
- 1 cup sunflower seeds
- 1 cup pumpkin seeds
- 1½ cups unsweetened shredded coconut
- ½ cup granulated erythritol
- ½ t salt
Instructions
- Preheat the oven to 325ºF. Line a large baking sheet with parchment paper and set aside.
- Combine all ingredients in a large bowl and mix well to incorporate thoroughly.
- Spread the mixture in an even layer on the prepared baking sheet. Place in the oven to bake 20–25 minutes, stirring the mixture halfway through baking.
- Remove the baking sheet from the oven and allow the granola to cool completely.
- Break it into chunks and transfer it to an airtight container to store.
- Enjoy with non-dairy milk or coconut yogurt!
