Ingredients
  

  • ¼ cup coconut oil melted
  • 1 t vanilla stevia liquid
  • ½ cup chopped almonds
  • ½ cup chopped pecans
  • ½ cup chopped cashews
  • 1 cup sunflower seeds
  • 1 cup pumpkin seeds
  • cups unsweetened shredded coconut
  • ½ cup granulated erythritol
  • ½ t salt

Instructions
 

  • Preheat the oven to 325ºF. Line a large baking sheet with parchment paper and set aside.
  • Combine all ingredients in a large bowl and mix well to incorporate thoroughly.
  • Spread the mixture in an even layer on the prepared baking sheet. Place in the oven to bake 20–25 minutes, stirring the mixture halfway through baking.
  • Remove the baking sheet from the oven and allow the granola to cool completely.
  • Break it into chunks and transfer it to an airtight container to store.
  • Enjoy with non-dairy milk or coconut yogurt!
