Tabouli is a classic Mediterranean salad featuring fresh parsley, mint, lemon, and whole-grain bulgur.
Mediterranean Tabouli
Ingredients
- 1 cup of bulgur
- 1 cup of boiling water
- ½ cup chopped fresh parsley
- 2 scallions chopped including greens
- ½ cup cucumbers chopped in bite-sized pieces
- ½ cup tomato chopped into small pieces
- ¼ cup mint chopped
DRESSING:
- ¼ cup freshly squeezed lemon juice
- 3 tablespoons of extra virgin olive oil
- 1 tablespoon of tamari or soy sauce
Instructions
- Place uncooked bulgur in a mixing bowl.
- Pour boiling water over the grain and cover.
- Let covered grain stand for minutes, then fluff with a fork.
- Once the grain has cooled to room temperature, add chopped parsley, scallions, cucumber, tomato, and mint.
- Toss gently.
- In a small bowl, blend lemon juice, olive oil, and tamari.
- Pour dressing over the bulgur and vegetable mix and toss gently.
