Mediterranean Tabouli

Ingredients
  

  • 1 cup of bulgur
  • 1 cup of boiling water
  • ½ cup chopped fresh parsley
  • 2 scallions chopped including greens
  • ½ cup cucumbers chopped in bite-sized pieces
  • ½ cup tomato chopped into small pieces
  • ¼ cup mint chopped

DRESSING:

  • ¼ cup freshly squeezed lemon juice
  • 3 tablespoons of extra virgin olive oil
  • 1 tablespoon of tamari or soy sauce

Instructions
 

  • Place uncooked bulgur in a mixing bowl.
  • Pour boiling water over the grain and cover.
  • Let covered grain stand for minutes, then fluff with a fork.
  • Once the grain has cooled to room temperature, add chopped parsley, scallions, cucumber, tomato, and mint.
  • Toss gently.
  • In a small bowl, blend lemon juice, olive oil, and tamari.
  • Pour dressing over the bulgur and vegetable mix and toss gently.
