of boiling water

chopped fresh parsley

scallions chopped including greens

cup
cucumbers chopped in bite-sized pieces
½
cup
tomato chopped into small pieces

mint chopped
DRESSING:
¼
cup
freshly squeezed lemon juice

tablespoons
of extra virgin olive oil

tablespoon
of tamari or soy sauce
Instructions
Place uncooked bulgur in a mixing bowl.
Pour boiling water over the grain and cover.
Let covered grain stand for minutes, then fluff with a fork.
Once the grain has cooled to room temperature, add chopped parsley, scallions, cucumber, tomato, and mint.
Toss gently.
In a small bowl, blend lemon juice, olive oil, and tamari.
Pour dressing over the bulgur and vegetable mix and toss gently.
