Green beans and lemon are delicious combination. I like to cook them until just soft, but still a little snap to them!
Lemony Green Beans
Ingredients
- Green beans washed and trimmed
- 1 teaspoon olive oil
- 1 lemon juiced
- 1 tablespoon cornstarch dissolved in ¼ cup of cold water
- Salt and pepper to taste
Instructions
- Heat oil in a pot.
- Add green beans and stir for 2 minutes.
- Add cornstarch and water mixture, stirring to thicken.
- Add lemon juice, salt and pepper to taste.
- Cover for 1-2 minutes to cook beans until fork tender.
