Ingredients
  

  • 1 lb 450g ground beef (85% lean/15% fat for juiciness)
  • Salt and pepper to taste
  • 12 small slices of cheese such as cheddar, American, or your preferred cheese
  • Beef tallow or butter for frying

Instructions
 

  • Prepare Patties: Divide the ground beef into small, equal portions—about the size of a golf ball. Flatten meach portion into a mini patty, making them slightly larger than the cheese slices since they will shrink during cooking. Season each patty with salt and pepper on both sides.
  • Cook Patties: Heat a skillet over medium-high heat and add a small amount of beef tallow or butter to grease the pan.
  • Once the skillet is hot, add the mini patties. Cook for 2-3 minutes on one side until a crust forms, then flip and cook for another 1-2 minutes on the other side for medium doneness.
  • Just before the patties are done, place a slice of cheese on top of each patty. Cover the skillet with a lid for the last 30 seconds to help the cheese melt.
  • Serve: Once the cheese is melted, remove the mini cheeseburger bites from the skillet and place them on a serving platter.
  • Serve immediately while hot and cheesy. For a more authentic cheeseburger experience without the bun, you can serve these with carnivore diet-friendly toppings on the side, like crispy bacon or a dollop of homemade mayonnaise.
