Keto Lemon-Glazed Spice Fritters
Ingredients
Fritters:
- ½ cup almond flour
- 3 tablespoons monk fruit sweetener or stevia sweetener
- 1 teaspoon baking powder
- 1 large egg
- ½ teaspoon arrowroot powder
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon vanilla extract
- Zest of half a lemon
- 2 cups refined coconut oil for frying
- Lemon Glaze:
- 2 tablespoons lemon juice
- 3 tablespoons Confectioners Swerve
Instructions
- In a large bowl, mix all of the dry ingredients together.
- Add the egg and mix until a sticky dough forms.
- On the stove or in a deep fryer, heat the coconut oil to 375°F.
- Drop balls of dough into the oil 4 or 5 at a time.
- Allow the dough to brown on one side then rotate to the other side.
- Cooking will take approximately 2 minutes per side.
- Remove the fritter from the oil and set on paper towels to drain excess oil.
- In a small bowl combine the lemon juice and Confectioners Swerve. Mix thoroughly until smooth.
- Dip cooled fritters in icing and serve.
