Keto Lemon-Glazed Spice Fritters

Ingredients
  

Fritters:

  • ½ cup almond flour
  • 3 tablespoons monk fruit sweetener or stevia sweetener
  • 1 teaspoon baking powder
  • 1 large egg
  • ½ teaspoon arrowroot powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon vanilla extract
  • Zest of half a lemon
  • 2 cups refined coconut oil for frying
  • Lemon Glaze:
  • 2 tablespoons lemon juice
  • 3 tablespoons Confectioners Swerve

Instructions
 

  • In a large bowl, mix all of the dry ingredients together.
  • Add the egg and mix until a sticky dough forms.
  • On the stove or in a deep fryer, heat the coconut oil to 375°F.
  • Drop balls of dough into the oil 4 or 5 at a time.
  • Allow the dough to brown on one side then rotate to the other side.
  • Cooking will take approximately 2 minutes per side.
  • Remove the fritter from the oil and set on paper towels to drain excess oil.
  • In a small bowl combine the lemon juice and Confectioners Swerve. Mix thoroughly until smooth.
  • Dip cooled fritters in icing and serve.
