Keto Creamy Coconut Tomato Curried Soup
- 4 lbs tomatoes, cored and diced
- 2 tbsp onion, minced
- 1 tsp garlic, minced
- 2 tsp curry powder
- 2 cups coconut drain
- 1 cup water
- 1 tsp salt
- Put all ingredients into the Instant Pot and cook on High for 5 minutes. Allow the pot to sit undisturbed for 10 minutes. After that, release pressure.
- Remove from the pot and use an immersion blender to mix all the ingredients together and get a smooth soup.
- Garnish and serve as desired
