Keto Vanilla Birthday Cake with Cream Cheese Frosting

Ingredients
  

Cake:

Frosting:

  • 32 ounces cream cheese room temperature
  • 1/3 cup butter room temperature
  • cup Confectioners Swerve sweetener
  • 1 teaspoon vanilla extract

Instructions
 

Cake:

  • Preheat oven to 350°Line the bottom of 9-inch round springform pan with parchment paper (or three of the same pans, if you have them).
  • Beat in the eggs with a hand mixer. Add coconut milk, Swerve, salt, and vanilla extract.
  • Slowly add in the almond flour, coconut flour, and baking powder and mix until well combined.
  • Pour of the cake batter into the pan and bake for 18 to 22 minutes until the top is slightly golden brown.
  • Repeat with remaining batter until you have 3 separate cake layers.

Frosting:

  • While the cake is baking, prepare your frosting.
  • Beat all frosting ingredients until smooth.

Assembly:

  • Allow cakes to cool completely before assembling. Once cooled, place one cake on a serving dish. Top with a layer of cream cheese frosting then stacks the next layer on top. Repeat. Use the remaining frosting to cover the top and sides of the cake.
  • Slice and serve.
