Ingredients
  

Crust:

  • 1 ½ cups almond flour
  • ½ cup melted butter
  • 2 tablespoons granulated Swerve
  • ¾ teaspoon ground cinnamon
  • teaspoon salt

Filling:

  • 3 cups cream cheese
  • 2 cups full-fat sour cream
  • 3 large eggs
  • 4 tablespoons granulated Swerve
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 300°Line the bottom of a 9-inch spring form pan with parchment paper.
  • Mix almond flour, melted butter, Swerve, salt, and cinnamon until well combined.
  • Pour mixture into the bottom of spring form pan and press down evenly to create the crust.
  • Bake for 10 minutes until golden brown. Remove from oven and allow to cool while you make the filling.
  • Mix eggs, granulated Swerve, cream cheese, sour cream and vanilla extract with an electric mixer until well combined.
  • Pour the filling over the cooled crust.
  • Bake for 30 minutes. Remove and allow to cool completely.
  • Once cooled, refrigerate for at least 6 hours.
  • Release spring form pan, slice, and serve.
