Keto BLT plus Chicken Dinner Salad

Ingredients
  

For the salad:

  • 4 Bacon Wrapped Chicken Fingers
  • 4 C of your favorite mixed greens
  • 12 cooked and chilled asparagus spears
  • ½ C red onion thinly sliced
  • 6 cherry tomatoes cut in half

For the vinaigrette:

  • Juice from ½ of a lemon
  • ¼ C light olive oil
  • 1 clove garlic minced
  • 1 tsp Dijon mustard
  • Grinding of fresh pepper

Instructions
 

  • Cut chicken fingers into rounds that are about ¼” thick.
  • Divide salad greens, red onion, asparagus spears & cherry tomatoes between 4 plates and arrange chicken rounds on top.
  • Combine all the dressing ingredients in a glass jar with a tight-fitting lid and give it a vigorous shake.
  • Drizzle dressing over salad and enjoy!
