Keto BLT plus Chicken Dinner Salad
Ingredients
For the salad:
- 4 Bacon Wrapped Chicken Fingers
- 4 C of your favorite mixed greens
- 12 cooked and chilled asparagus spears
- ½ C red onion thinly sliced
- 6 cherry tomatoes cut in half
For the vinaigrette:
- Juice from ½ of a lemon
- ¼ C light olive oil
- 1 clove garlic minced
- 1 tsp Dijon mustard
- Grinding of fresh pepper
Instructions
- Cut chicken fingers into rounds that are about ¼” thick.
- Divide salad greens, red onion, asparagus spears & cherry tomatoes between 4 plates and arrange chicken rounds on top.
- Combine all the dressing ingredients in a glass jar with a tight-fitting lid and give it a vigorous shake.
- Drizzle dressing over salad and enjoy!
