Hamburger Soup
Ingredients
- 2 lbs ground grass-fed beef
- 1 small onion chopped
- 4 celery stalks sliced
- 10 oz radishes chopped
- 3 garlic cloves minced
- 32 oz beef bone broth or beef broth
- 15 oz pumpkin purée
- 2 t sea salt
- 1 t black pepper
- 1 t dried oregano
- 1 t dried basil
- 1 t chopped fresh parsley
- 10 oz baby spinach
Optional Toppings:
- 8 bacon slices cooked until crispy
- 8 T shredded cheddar cheese
- 8 T greens
Instructions
- In a 4- to 6-quart slow cooker, add the beef. Add the onion, celery, radishes, and garlic on top of the beef.
- Add the broth, pumpkin purée, sea salt, black pepper, oregano, basil, and parsley.
- Cover and cook on LOW for 5½ hours. Stir in the spinach.
- Cover and cook on LOW for 30 minutes.
- Divide between bowls and serve with your favorite toppings.
