Broccoli Cheddar Soup
Ingredients
- 1 T grass-fed butter
- 1 onion chopped
- 1 carrot grated
- 1 large head broccoli cut into florets
- 2 garlic cloves minced
- 26 oz chicken broth or bone broth
- 8 oz heavy cream
- ½ t sea salt
- ½ t black pepper
- 2 cups shredded cheddar cheese plus additional for garnish
- 2 T crumbled cooked nitrate-free bacon optional
- ¼ t crushed red pepper flakes optional
Instructions
- Grease a 4- to 6-quart slow cooker with the butter. Add the onion, carrot, broccoli, garlic, chicken broth, heavy cream, sea salt, and black pepper. Cover and cook on
- HIGH for 3 hours, until the vegetables are tender.
- For a smoother soup, transfer half the soup to a blender and blend until smooth. Return the pureed soup to the slow cooker. Stir in the cheddar cheese, in small batches, to get a silky texture.
- Serve topped with additional shredded cheese, bacon, and red pepper flakes.
