Ingredients
  

  • 1 lb tomatoes diced
  • 1 medium zucchini diced (reserve a few slices for garnish)
  • 1 onion cut into wedges
  • 2 3-oz links sweet pork sausage, cooked and crumbled
  • 2 garlic cloves minced
  • 1 T chopped fresh thyme plus additional for garnish
  • ½ T fresh oregano or ½ t dried oregano
  • 1 T olive oil
  • t sea salt
  • t black pepper
  • 1 cup vegetable broth

Instructions
 

  • In a 4- to 6-quart slow cooker, add the tomatoes, zucchini, and onion. Add the sausage, garlic, thyme, and oregano.
  • Add the olive oil, sea salt, and black pepper and mix well until combined. Add the vegetable broth.
  • Cover and cook on LOW for 4 hours.
  • Serve hot and garnish with thyme and reserved zucchini slices.
