Zucchini Tomato Soup
Ingredients
- 1 lb tomatoes diced
- 1 medium zucchini diced (reserve a few slices for garnish)
- 1 onion cut into wedges
- 2 3-oz links sweet pork sausage, cooked and crumbled
- 2 garlic cloves minced
- 1 T chopped fresh thyme plus additional for garnish
- ½ T fresh oregano or ½ t dried oregano
- 1 T olive oil
- ⅛ t sea salt
- ⅛ t black pepper
- 1 cup vegetable broth
Instructions
- In a 4- to 6-quart slow cooker, add the tomatoes, zucchini, and onion. Add the sausage, garlic, thyme, and oregano.
- Add the olive oil, sea salt, and black pepper and mix well until combined. Add the vegetable broth.
- Cover and cook on LOW for 4 hours.
- Serve hot and garnish with thyme and reserved zucchini slices.
