Ingredients
  

  • 12 slices of bacon
  • 6 large eggs
  • 1 tablespoon butter for scrambling eggs
  • Salt and pepper to taste optional, depending on your preference
  • Shredded cheese for topping optional, cheddar or any cheese of choice

Instructions
 

Prepare Bacon Shells:

  • Preheat your oven to 400°F (200°C).
  • Weave 2 slices of bacon together per ‘taco shell’ or simply overlap them slightly to create a base wide enough to hold the filling once baked. Drape them over an inverted muffin tin or a taco shell mold to create a taco shape.
  • Bake in the preheated oven for about 12-15 minutes, or until the bacon is crispy. Keep an eye on them to ensure they don’t burn. Adjust the time based on how crispy you like your bacon.
  • Once done, carefully remove them from the oven and let them cool slightly on a paper towel to drain off excess fat. They will firm up and become more shell-like as they cool.

Scramble the Eggs:

  • While the bacon is cooking, beat the eggs in a bowl. Add salt and pepper to taste.
  • Melt butter in a non-stick skillet over medium heat. Pour in the beaten eggs and let them sit, undisturbed, for a few seconds, then gently stir with a spatula. Continue cooking until the eggs are softly set and slightly runny in places, as they will continue to cook off the heat. Remove from heat once they’re done to your liking.

Assemble the Tacos:

  • Fill each bacon shell with an even amount of scrambled eggs.
  • If using, sprinkle shredded cheese on top of the hot eggs to allow it to melt slightly.
