Pulled Pork with Broccoli
Ingredients
- 2 lbs pork loin or shoulder
- 2 T avocado oil
- 2 cups beef broth
- ½ cup tamari sauce
- 1 t onion powder
- 1 t garlic powder
- 1 t chili powder
- 3 cups small fresh broccoli florets
- Sea salt and black pepper to taste
- Crushed red pepper flakes for garnish
Instructions
- In the bowl of a slow cooker, add the pork and avocado oil.
- In a small bowl, combine the beef broth, tamari sauce, onion powder, garlic powder, and chili powder. Pour the broth mixture into the pot and toss to coat the meat.
- Cover and cook on LOW for 7 hours, or until the pork is extremely tender. Thirty minutes before it is done, add the broccoli to the pot, stir to coat, and continue cooking.
- When the meat is very tender, transfer it to a cutting board. With 2 forks or a shredder, shred the meat.
- Return the shredded meat to the slow cooker pot and mix it lightly with the sauce and broccoli. Add sea salt and black pepper, to taste.
- Cook for 15 minutes on LOW to heat through. Add a pinch of red pepper flakes to garnish and serve hot.
