Homemade Gluten-Free Granola
Ingredients
- 3 cups GF rolled oats
- 1 cup mixed nuts roughly chopped
- ½ cup mixed seeds
- ¼ cup coconut oil melted
- 1/3 cup maple syrup or honey
- 2 tsp. vanilla extract
- ½ tsp. salt
- 1 tsp. ground cinnamon
- ½ cup dried fruits chopped if large pieces
Optional:
- coconut flakes, dark chocolate chips
Instructions
- Begin by preheating your oven to 300°F and lining a large baking sheet with parchment paper.
- In a large bowl, mix the rolled oats, nuts, and seeds. In a separate small bowl, whisk together the melted coconut oil, maple syrup or honey, vanilla extract, salt, and cinnamon until well combined.
- Pour the wet ingredients over the oat mixture and stir until everything is well coated. Spread the granola in an even layer on the prepared baking sheet.
- Bake in the preheated oven for about 25-30 minutes, or until golden, stirring halfway through to ensure even baking. Let the granola cool completely on the baking sheet. It will crisp up as it cools. Once cooled, stir in the dried fruits (and coconut flakes or chocolate chips if using).
- Store the granola in an airtight container at room temperature for up to 2 weeks
Tip:
- For a clumpier granola, press the mixture firmly onto your baking sheet before baking and let it cool completely before breaking it into pieces.
