Keto Coconut Chocolate Cookies
Ingredients
- 6 cup of shredded unsweetened coconut
- 1 cup of coconut milk
- ¼ cup of sugar free maple syrup
- ¼ teaspoon of almond extract
Instructions
- Blend coconut in your food processor until you have a nice texture
- Add coconut milk and syrup, keep blending until you have a nice batter
- Add more milk if the batter is a bit too crumbly
- Transfer the mixture to mixing bowl
- Use your hand to form small balls
- Line a baking tray with parchment paper and transfer the balls, flatten them lightly to form a cookie shape
- Sprinkle coconut on top and chill for 2-3 hour until firm
- Enjoy!
