Keto Coconut Chocolate Cookies

Ingredients
  

  • 6 cup of shredded unsweetened coconut
  • 1 cup of coconut milk
  • ¼ cup of sugar free maple syrup
  • ¼ teaspoon of almond extract

Instructions
 

  • Blend coconut in your food processor until you have a nice texture
  • Add coconut milk and syrup, keep blending until you have a nice batter
  • Add more milk if the batter is a bit too crumbly
  • Transfer the mixture to mixing bowl
  • Use your hand to form small balls
  • Line a baking tray with parchment paper and transfer the balls, flatten them lightly to form a cookie shape
  • Sprinkle coconut on top and chill for 2-3 hour until firm
  • Enjoy!
