of shredded unsweetened coconut

cup
of coconut milk
¼
cup
of sugar free maple syrup
¼
teaspoon
of almond extract
Instructions
Blend coconut in your food processor until you have a nice texture
Add coconut milk and syrup, keep blending until you have a nice batter
Add more milk if the batter is a bit too crumbly
Transfer the mixture to mixing bowl
Use your hand to form small balls
Line a baking tray with parchment paper and transfer the balls, flatten them lightly to form a cookie shape
Sprinkle coconut on top and chill for 2-3 hour until firm
