French Onion Soup
Ingredients
- 2 lbs white onions sliced thin
- 3 cups beef broth or bone broth
- 1 T grass-fed butter
- 1 t garlic minced
- 1 t sea salt
- ½ t fresh thyme
- ¼ t black pepper
- 1 bay leaf
Toppings:
- 1 cup + 2 T grated Gruyere or white cheddar cheese
Instructions
- In a 4- to 6-quart slow cooker, add all the ingredients except the cheese. Stir to mix well.
- Cover and cook on LOW for 8 hours. Remove the bay leaf.
- Before serving, preheat the broiler. Divide the soup in between oven-proof bowls and top each bowl with 3 T cheese.
- Place the bowls into the oven or broiler and broil for 3 minutes or until the cheese is melted and golden on top.
- Serve immediately.
