Shirataki Ramen
Ingredients
- 1 lb boneless skinless chicken breasts
- ½ yellow onion diced
- 3 garlic cloves minced
- 32 oz chicken broth or bone broth
- 4 T coconut aminos
- 4 T rice vinegar
- 4 oz almond milk
- 4 oz sliced button mushrooms
- ½ t ground ginger
- ½ t black pepper
- 10 oz shirataki noodles or zucchini noodles
Toppings optional:
- 4 soft-boiled large eggs
- 4 T fresh chopped cilantro
- 2 T sliced jalapeño
- 4 T sliced green onions
Instructions
- In a 4- to 6-quart slow cooker, place the chicken, onion, garlic, chicken broth, coconut aminos, rice vinegar, almond milk, mushrooms, ginger, and black pepper.
- Cover and cook on LOW for 4 hours.
- Remove the chicken from the slow cooker and slice the chicken into pieces. Prepare your noodles according to package instructions or use spiralized zucchini noodles.
- Add the chicken and noodles to the slow cooker, cover, and let sit for 15 minutes.
- Serve with desired toppings.
