Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • ½ yellow onion diced
  • 3 garlic cloves minced
  • 32 oz chicken broth or bone broth
  • 4 T coconut aminos
  • 4 T rice vinegar
  • 4 oz almond milk
  • 4 oz sliced button mushrooms
  • ½ t ground ginger
  • ½ t black pepper
  • 10 oz shirataki noodles or zucchini noodles

Toppings optional:

  • 4 soft-boiled large eggs
  • 4 T fresh chopped cilantro
  • 2 T sliced jalapeño
  • 4 T sliced green onions

Instructions
 

  • In a 4- to 6-quart slow cooker, place the chicken, onion, garlic, chicken broth, coconut aminos, rice vinegar, almond milk, mushrooms, ginger, and black pepper.
  • Cover and cook on LOW for 4 hours.
  • Remove the chicken from the slow cooker and slice the chicken into pieces. Prepare your noodles according to package instructions or use spiralized zucchini noodles.
  • Add the chicken and noodles to the slow cooker, cover, and let sit for 15 minutes.
  • Serve with desired toppings.
