French Onion Soup

Ingredients
  

  • 2 lbs white onions sliced thin
  • 3 cups beef broth or bone broth
  • 1 T grass-fed butter
  • 1 t garlic minced
  • 1 t sea salt
  • ½ t fresh thyme
  • ¼ t black pepper
  • 1 bay leaf

Toppings:

  • 1 cup + 2 T grated Gruyere or white cheddar cheese

Instructions
 

  • In a 4- to 6-quart slow cooker, add all the ingredients except the cheese. Stir to mix well.
  • Cover and cook on LOW for 8 hours. Remove the bay leaf.
  • Before serving, preheat the broiler. Divide the soup in between oven-proof bowls and top each bowl with 3 T cheese.
  • Place the bowls into the oven or broiler and broil for 3 minutes or until the cheese is melted and golden on top.
  • Serve immediately.
