Ingredients
  

  • 2 lbs ground grass-fed beef
  • 1 small onion chopped
  • 4 celery stalks sliced
  • 10 oz radishes chopped
  • 3 garlic cloves minced
  • 32 oz beef bone broth or beef broth
  • 15 oz pumpkin purée
  • 2 t sea salt
  • 1 t black pepper
  • 1 t dried oregano
  • 1 t dried basil
  • 1 t chopped fresh parsley
  • 10 oz baby spinach

Optional Toppings:

  • 8 bacon slices cooked until crispy
  • 8 T shredded cheddar cheese
  • 8 T greens

Instructions
 

  • In a 4- to 6-quart slow cooker, add the beef. Add the onion, celery, radishes, and garlic on top of the beef.
  • Add the broth, pumpkin purée, sea salt, black pepper, oregano, basil, and parsley.
  • Cover and cook on LOW for 5½ hours. Stir in the spinach.
  • Cover and cook on LOW for 30 minutes.
  • Divide between bowls and serve with your favorite toppings.
