Carnivore Carbonara with Pork Belly
Ingredients
- 2 lbs about 900g pork belly, cut into 1/2-inch cubes
- 6 large egg yolks
- 1 cup about 100g grated Parmesan cheese
- 1 tsp 5 ml sea salt, or to taste
Optional:
- 1/2 tsp 2.5 ml black pepper, or to taste (for those who include spices)
Instructions
- Cook Pork Belly: Place the cubed pork belly in the slow cooker. Season with sea salt and optional black pepper. Cook on low for 6-7 hours, or until the pork belly is tender and begins to crisp up.
- Prepare Egg Mixture: In a bowl, whisk together the egg yolks and grated Parmesan cheese until well combined. Set aside.
- Combine: Once the pork belly is cooked, transfer it to a large mixing bowl, retaining some of the rendered fat. While the pork belly is still hot, add the egg and cheese mixture to the bowl. Stir quickly and continuously. The heat from the pork belly will gently cook the egg yolks and melt the cheese, creating a creamy sauce.
- Serve: Serve the Carnivore “Carbonara” immediately, garnishing with additional grated Parmesan cheese if desired.
