Carnivore Beef “Barley” Soup
Ingredients
- 2 lbs about 0.9 kg beef stew meat, cut into cubes
- 6 cups about 1.4 liters beef broth
- 1 cup about 240 ml ground pork rinds (as a barley substitute)
- 1 teaspoon about 5 ml salt, or to taste
Optional:
- 1/2 teaspoon about 2.5 ml black pepper, or to taste (for those who include spices in their carnivore diet)
Instructions
- Brown the Beef: In a large pot over medium-high heat, brown the beef cubes. Set aside.
- Simmer: Add beef broth to the pot. Bring to a boil, then reduce heat to simmer.
- Add Beef and “Barley”: Return the beef to the pot along with ground pork rinds. Simmer until the meat is tender and the pork rinds have absorbed some of the broth, becoming soft, about 1-2 hours.
- Season: Add salt and optional pepper, adjusting to taste.
- Serve: Ladle into bowls and serve warm.
