Carnivore Beef Bourguignon
Ingredients
- 3 lbs about 1.36 kg beef chuck roast, cut into 2-inch cubes
- 1 cup 240 ml beef broth (use a carnivore-friendly, zero-carb broth)
- 8 oz about 227g bacon, cut into small pieces
- 2 tbsp 30 ml beef tallow or clarified butter
- 1 tsp 5 ml sea salt, or to taste
Optional:
- 1/2 tsp 2.5 ml black pepper, or to taste (for those who include spices)
Instructions
- Brown the Bacon: Place the bacon pieces in the slow cooker. Cover and set on high until the bacon is crispy, approximately 30 minutes. Remove the bacon and set aside, leaving the fat in the slow cooker.
- Brown the Beef: Toss the beef cubes with sea salt (and optional black pepper). Add beef tallow or clarified butter to the slow cooker with the bacon fat. Add beef cubes to the slow cooker and cook on high until they are browned on all sides, about 45 minutes. You may need to do this in batches.
- Slow Cook: Once all the beef is browned and back in the slow cooker, add the crispy bacon pieces. Pour in beef broth, ensuring the meat is well-covered.
- Cooking: Cover and cook on low for 6-8 hours, or until the beef is tender and falls apart easily.
- Serve: Discard any solid fat pieces if desired. Serve the beef bourguignon hot.
