Bacon-Wrapped Seafood Rolls
Ingredients
- 12 large scallops or 12 large shrimp cleaned and deveined (about 1 lb or 450g)
- 12 slices of bacon
- 1 tsp 5 ml sea salt, or to taste
Instructions
- Preparation: Season the scallops or shrimp with sea salt.
- Wrapping: Wrap each scallop or shrimp with a slice of bacon, securing the ends with a toothpick if necessary.
- Slow Cooker Setup: Arrange the bacon wrapped seafood in a single layer in the slow cooker. No need to add water or broth, as the bacon will render fat that will help cook the seafood.
- Cooking: Cover and cook on low for 2-3 hours, or until the bacon is cooked through and the seafood is tender. If you prefer crispy bacon, you may finish the rolls under a broiler for a few minutes or pan-sear them quickly before serving.
- Serving: Serve the bacon-wrapped seafood rolls hot, as an appetizer or a main dish.
