Beef Carnitas is a flavorful Mexican dish made by slow-cooking beef until tender, then shredding it and crisping it in a skillet for a crispy, caramelized finish. Perfect for tacos, burritos, or bowls.

Ingredients
- 3 lbs about 1.36 kg beef chuck roast, cut into large chunks
- 2 tsp 10 ml sea salt, or to taste
- 1 cup 240 ml beef tallow
Instructions
- Preparation: Season the beef chunks generously with sea salt.
- Cooking in Tallow: Place the seasoned beef chunks in the slow cooker. Add the beef tallow, ensuring the meat is wellcoated.
- Slow Cooking: Cook on low for 8-10 hours, or until the beef is tender and can be easily shredded with a fork.
- Shredding and Serving: Remove the beef from the slow cooker and shred it with two forks. If desired, you can crisp up the shredded beef in a hot skillet for a few minutes before serving to add texture.
