Ingredients
  

  • 4 bok choy
  • 6 4-oz thick-cut, bone-in pork chops
  • 1 small onion chopped
  • 3 garlic cloves minced
  • cup low-sodium soy sauce
  • 1 T sesame oil
  • 1 T lemon juice
  • cup brown erythritol
  • 1 t ground ginger
  • ½ t crushed red pepper flakes plus additional for garnish
  • ½ t sea salt
  • 2 green onions sliced, for garnish

Instructions
 

  • Cut the bok choy into bite-size pieces, keeping the stems separate from the leaves.
  • In a slow cooker, place the pork chops, bok choy stems, onion, and garlic.
  • In a small bowl, mix the soy sauce, sesame oil, lemon juice, erythritol, ginger, red pepper flakes, and sea salt.
  • Pour the mixture over the pork chops and vegetables.
  • Cover and cook on LOW for 6 hours or on HIGH for 3 hours. Halfway through cooking, add the bok choy leaves, stir lightly, cover, and continue cooking.
  • Serve hot, with the sauce drizzled over pork chops and bok choy. Top with green onions and additional red pepper flakes, if desired.
