Asian Pork Chops
Ingredients
- 4 bok choy
- 6 4-oz thick-cut, bone-in pork chops
- 1 small onion chopped
- 3 garlic cloves minced
- ⅓ cup low-sodium soy sauce
- 1 T sesame oil
- 1 T lemon juice
- ⅓ cup brown erythritol
- 1 t ground ginger
- ½ t crushed red pepper flakes plus additional for garnish
- ½ t sea salt
- 2 green onions sliced, for garnish
Instructions
- Cut the bok choy into bite-size pieces, keeping the stems separate from the leaves.
- In a slow cooker, place the pork chops, bok choy stems, onion, and garlic.
- In a small bowl, mix the soy sauce, sesame oil, lemon juice, erythritol, ginger, red pepper flakes, and sea salt.
- Pour the mixture over the pork chops and vegetables.
- Cover and cook on LOW for 6 hours or on HIGH for 3 hours. Halfway through cooking, add the bok choy leaves, stir lightly, cover, and continue cooking.
- Serve hot, with the sauce drizzled over pork chops and bok choy. Top with green onions and additional red pepper flakes, if desired.
