Cut the bok choy into bite-size pieces, keeping the stems separate from the leaves.
In a slow cooker, place the pork chops, bok choy stems, onion, and garlic.
In a small bowl, mix the soy sauce, sesame oil, lemon juice, erythritol, ginger, red pepper flakes, and sea salt.
Pour the mixture over the pork chops and vegetables.
Cover and cook on LOW for 6 hours or on HIGH for 3 hours. Halfway through cooking, add the bok choy leaves, stir lightly, cover, and continue cooking.
Serve hot, with the sauce drizzled over pork chops and bok choy. Top with green onions and additional red pepper flakes, if desired.
