Ingredients
  

  • lbs cubed stew beef
  • ½ white onion chopped
  • 1 carrot peeled and sliced
  • 2 cups white button mushrooms sliced
  • 2 cups beef stock
  • 2 T olive oil
  • 1 bay leaf
  • 1 sprig fresh rosemary
  • ½ t sea salt
  • ½ t black pepper
  • 2 T chopped fresh parsley for garnish

Instructions
 

  • In a slow cooker, place the beef. Add the remaining ingredients except the parsley and stir to combine.
  • Cover and cook on LOW for 7 hours or on HIGH for 4 hours until the meat is very tender.
  • Sprinkle the beef with the parsley and serve hot.
