Keto Roasted Salmon in Ginger-Lemon Marinade

  • 2 lbs salmon fillet
  • 3/4 cup lemon juice freshly squeezed
  • 1 medium piece of ginger
  • Salt to taste
  • 1 tsp fresh parsley finely
  • chopped
  • 1 tsp fresh chives chopped
  • 1/4 cup Garlic in- fused olive oil


  • Cut the salmon into slices and place on a large plate. Season with the salt and pour the lemon juice over the salmon fillets.
  • Chop ginger into strips and place on the top of the fish. Cover and marinate in the fridge for 3 hours.
  • Preheat oven to 360 degrees F/180C.
  • Line deep baking dish with parchment paper.
  • Remove the salmon from marinade and arrange in baking dish. Dis-card lemon juice and ginger. Season with the salt, and sprinkle with parsley and the chives; drizzle with the olive oil.
  • Cover with foil and place in the oven. Bake for 30 - 40 minutes, then open the foil and bake for another 5-10 minutes.
  • Serve hot
