Keto Roasted Salmon in Ginger-Lemon Marinade
Ingredients
- 2 lbs salmon fillet
- 3/4 cup lemon juice freshly squeezed
- 1 medium piece of ginger
- Salt to taste
- 1 tsp fresh parsley finely
- chopped
- 1 tsp fresh chives chopped
- 1/4 cup Garlic in- fused olive oil
Instructions
- Cut the salmon into slices and place on a large plate. Season with the salt and pour the lemon juice over the salmon fillets.
- Chop ginger into strips and place on the top of the fish. Cover and marinate in the fridge for 3 hours.
- Preheat oven to 360 degrees F/180C.
- Line deep baking dish with parchment paper.
- Remove the salmon from marinade and arrange in baking dish. Dis-card lemon juice and ginger. Season with the salt, and sprinkle with parsley and the chives; drizzle with the olive oil.
- Cover with foil and place in the oven. Bake for 30 - 40 minutes, then open the foil and bake for another 5-10 minutes.
- Serve hot
