Mango Bacon Butternut Squash Hash
- 2 slices bacon
- 1 ripe mango diced into cubes
- 1 small butternut squash diced into cubes
- ½ t dried thyme
- Salt and pepper, to taste
- Cook bacon in a large pan according to package instructions. Remove and set aside.
- Place the butternut squash, thyme, salt and pepper in the pan with the rendered bacon fat. Cook 10 minutes until the squash softens, stirring periodically.
- Break up the bacon with your hands and sprinkle over the hash. Add mango to the pan and cook another 5 minutes before serving.
