Mango Bacon Butternut Squash Hash


  • 2 slices bacon
  • 1 ripe mango diced into cubes
  • 1 small butternut squash diced into cubes
  • ½ t dried thyme
  • Salt and pepper, to taste


  • Cook bacon in a large pan according to package instructions. Remove and set aside.
  • Place the butternut squash, thyme, salt and pepper in the pan with the rendered bacon fat. Cook 10 minutes until the squash softens, stirring periodically.
  • Break up the bacon with your hands and sprinkle over the hash. Add mango to the pan and cook another 5 minutes before serving.
