  • ½ cup blanched almond flour
  • 4 ounces cream cheese
  • ¼ cup pumpkin puree
  • 2 eggs
  • ½ tsp. pumpkin pie spice
  • ½ tsp. cinnamon
  • 1 tsp. vanilla extract
  • 1 tbs. stevia


  • Mix all ingredients in a blender until smooth.
  • Spray griddle with non-stick cooking spray. Over medium heat, divide batter to create 8 small pancakes. Allow cooking until middle begins to bubble, then flip. About 2-4 minutes. Cook for another few minutes.
  • Serve with toppings of choice and enjoy!
