Keto Mediterranean Seafood Soup (Instant Pot)
- 2 Tbsp extra-virgin olive oil
- 12 oz mackerel fillets
- 12 oz shrimp
- 4 cups water
- 1/2 cup fresh parsley finely
- 2 Tbsp lemon juice
- Coarse salt and ground white pepper
- Pour the oil in your Instant Pot and add all remaining ingredients.
- Lock lid into place and set on the MANUAL setting for 5 minutes.
- Use Quick Release - turn the valve from sealing to venting to release the pressure.
- Once all of the pressure releases the steam will no longer come out of the vent and you’ll be able to open the lid.
- Ladle a soup among the bowls and serve with fresh lemon juice.
