Keto Mediterranean Seafood Soup (Instant Pot)

- 2 Tbsp extra-virgin olive oil
- 12 oz mackerel fillets
- 12 oz shrimp
- 4 cups water
- 1/2 cup fresh parsley finely
- chopped
- 2 Tbsp lemon juice
- Coarse salt and ground white pepper
Pour the oil in your Instant Pot and add all remaining ingredients.
Lock lid into place and set on the MANUAL setting for 5 minutes.
Use Quick Release - turn the valve from sealing to venting to release the pressure.
Once all of the pressure releases the steam will no longer come out of the vent and you’ll be able to open the lid.
Ladle a soup among the bowls and serve with fresh lemon juice.
