Keto Marinated Cherry Tomato Salad
Ingredients
- 6 Zima Cherry Tomatoes cut in half lengthways
- ¼ C Red Onion extra-thin slices
- 6 sun-dried black olives pitted and coarsely chopped
- 2 tbsp fresh lemon juice
- 2 tbsp Extra Virgin Olive Oil
- ¼ C baby spinach leaves
Instructions
- Mix together the Zima tomatoes, red onion and dried black olives.
- Whisk together the lemon juice and olive oil. Pour over salad and toss, making sure to coat all the ingredients.
- Set aside on the counter at room temperature to marinate for ½ - 1 hour before serving.
- Arrange the baby spinach leaves on two plates and spoon the marinated tomato salad over-top dividing the dressing between the portions.
