Keto Marinated Cherry Tomato Salad
- 6 Zima Cherry Tomatoes cut in half lengthways
- ¼ C Red Onion extra-thin slices
- 6 sun-dried black olives pitted and coarsely chopped
- 2 tbsp fresh lemon juice
- 2 tbsp Extra Virgin Olive Oil
- ¼ C baby spinach leaves
Mix together the Zima tomatoes, red onion and dried black olives.
Whisk together the lemon juice and olive oil. Pour over salad and toss, making sure to coat all the ingredients.
Set aside on the counter at room temperature to marinate for ½ - 1 hour before serving.
Arrange the baby spinach leaves on two plates and spoon the marinated tomato salad over-top dividing the dressing between the portions.
