Keto Marinated Cherry Tomato Salad

Ingredients
  

  • 6 Zima Cherry Tomatoes cut in half lengthways
  • ¼ C Red Onion extra-thin slices
  • 6 sun-dried black olives pitted and coarsely chopped
  • 2 tbsp fresh lemon juice
  • 2 tbsp Extra Virgin Olive Oil
  • ¼ C baby spinach leaves

Instructions
 

  • Mix together the Zima tomatoes, red onion and dried black olives.
  • Whisk together the lemon juice and olive oil. Pour over salad and toss, making sure to coat all the ingredients.
  • Set aside on the counter at room temperature to marinate for ½ - 1 hour before serving.
  • Arrange the baby spinach leaves on two plates and spoon the marinated tomato salad over-top dividing the dressing between the portions.
