Keto Instant Brussels Sprouts and Bacon Omelet
- 2 Tbsp garlic-infused olive oil
- 4 slices cubed bacon
- ¾ lb. Brussels sprouts peeled and chopped
- 1 Tbsp of apple cider vinegar
- 4 large eggs
- ¼ cup of Olive oil
- Salt and pepper to taste
- Press SAUTÉ button on your Instant Pot and heat the oil.
- Sauté bacon and Brussels sprout for 2 minutes.
- Press the Stop button.
- Whisk the eggs with a pinch of salt and pepper, and with apple cider vinegar.
- Pour the egg mixture into your Instant Pot.
- Lock lid into place and set on the MANUAL setting for 5 minutes.
- Use Quick Release - turn the valve from sealing to venting to release the pressure.
- Serve hot.
