Instant Keto Cauliflower Mash
Ingredients
- 1 ½ lbs. fresh cauliflower cut in floweret
- 1/3 cup garlic-infused olive oil
- ¼ cup Mayonnaise preferable gluten-free, grain-free
- 1 Tbsp fragrant herb salt
- 1 cup water for Instant Pot
Instructions
- Rinse and chop the cauliflower, removing the thick core; trim off the leaves.
- Pour 1 cup water and insert a steamer in the inner liner of your Instant Pot,
- Put the cauliflower floweret into the steamer.
- Lock lid into place and set on the MANUAL setting for 1-2 minutes.
- Use Quick Release and open the lid.
- Transfer the cauliflower to your fast-speed blender.
- Add the oil, mayonnaise and herbal salt.
- Blend until smooth well.
- Taste and adjust salt to taste. Serve immediately.
