Keto Instant Brussels Sprouts and Bacon Omelet

Ingredients
  

  • 2 Tbsp garlic-infused olive oil
  • 4 slices cubed bacon
  • ¾ lb. Brussels sprouts peeled and chopped
  • 1 Tbsp of apple cider vinegar
  • 4 large eggs
  • ¼ cup of Olive oil
  • Salt and pepper to taste

Instructions
 

  • Press SAUTÉ button on your Instant Pot and heat the oil.
  • Sauté bacon and Brussels sprout for 2 minutes.
  • Press the Stop button.
  • Whisk the eggs with a pinch of salt and pepper, and with apple cider vinegar.
  • Pour the egg mixture into your Instant Pot.
  • Lock lid into place and set on the MANUAL setting for 5 minutes.
  • Use Quick Release - turn the valve from sealing to venting to release the pressure.
  • Serve hot.
