Keto Creamy Shrimp with Zucchini Noodles
Ingredients
Sauce
- 1 tbsp olive oil
- ½ onion diced
- 1 clove garlic minced
- 1 teaspoon dried oregano
- zest and juice of ½ lemon
- 2 teaspoons tomato paste
- 5 ounces cream cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 5 ounces prawns cooked
- 2 tablespoons basil chopped
Noodles
- 1 tablespoon olive oil
- 20 ounces zucchini noodles
- 1 cup spinach raw
- 2 tablespoons basil chopped
Instructions
- Heat the olive oil in a large pan over a medium heat. Add the onion and garlic. Cook until softened, about 5 minutes.
- Add the oregano, lemon zest and juice, and tomato paste to the pan. Stir to combine.
- Add the cream cheese to the pan. Season with salt and pepper, and stir to combine until the cheese has melted and there is a thick sauce.
- Add the prawns and the basil leaves to the sauce and simmer gently for a further 1 to 2 minutes until the prawns are warmed through.
- In a second large pan, heat the olive oil over medium heat. Add the zucchini and cook gently for 1 to 2 minutes, until just starting to soften.
- Once the zucchini begins to soften, add the spinach and stir through until just wilted. This will only take about a minute.
- Drain the vegetables completely and spoon the sauce over the noodles. Garnish with chopped basil.
