Easy Baked Oatmeal
Ingredients
- 2 eggs
- ½ cup unsweetened applesauce
- ¼ cup honey
- 1 tablespoon vanilla extract
- 2 teaspoons cinnamon
- ½ teaspoon salt
- 2 teaspoons baking powder
- 3 cups old fashioned oats
- 1 cup milk or unsweetened milk substitute: almond, hemp, rice, soy, pea, coconut
- 1 cup fresh or frozen blueberries Plain greek yogurt fruit for topping (optional)
Instructions
- Preheat oven to 350°F. Oil 9 x 13 pyrex with coconut oil or butter.
- Whisk eggs, applesauce, brown sugar, and vanilla until smooth.
- Stir in cinnamon, salt, and baking powder, then add oats and milk.
- Gently fold in blueberries and spread in prepared pyrex.
- Bake for 23-35 minutes until oatmeal is browned and not jiggly in the center.
- Cool slightly before serving.
- Serve with 100% maple syrup and top with plain yogurt or fruit if desired.
