Easy Baked Oatmeal

Blueberry Baked Oatmeal is an easy and hearty breakfast or brunch. Store in refrigerator up to 4 days. Portion and freeze to reheat for a delicious  breakfast on the go!

Easy Baked Oatmeal

Ingredients
  

  • 2 eggs
  • ½ cup unsweetened applesauce
  • ¼ cup honey
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 3 cups old fashioned oats
  • 1 cup milk or unsweetened milk substitute: almond, hemp, rice, soy, pea, coconut
  • 1 cup fresh or frozen blueberries Plain greek yogurt fruit for topping (optional)

Instructions
 

  • Preheat oven to 350°F. Oil 9 x 13 pyrex with coconut oil or butter.
  • Whisk eggs, applesauce, brown sugar, and vanilla until smooth.
  • Stir in cinnamon, salt, and baking powder, then add oats and milk.
  • Gently fold in blueberries and spread in prepared pyrex.
  • Bake for 23-35 minutes until oatmeal is browned and not jiggly in the center.
  • Cool slightly before serving.
  • Serve with 100% maple syrup and top with plain yogurt or fruit if desired.
