Carrot Ginger Dressing
Ingredients
- ⅓ cup extra-virgin olive oil
- ⅓ cup rice vinegar
- 2 large carrots peeled and roughly chopped (about ⅔ cup)
- 2 tablespoons peeled and roughly chopped fresh ginger
- 2 tablespoons lime juice
- 1 tablespoon plus
- 1 teaspoon honey or maple syrup
- 1 ½ teaspoons toasted sesame oil
- ¼ teaspoon salt
Instructions
- In a blender or food processor, combine all of the dressing ingredients.
- Blend until smooth.
- Drizzle over grain bowl or salad.
