milk or unsweetened milk substitute: almond, hemp, rice, soy, pea, coconut

fresh or frozen blueberries Plain greek yogurt fruit for topping (optional)
Instructions
Preheat oven to 350°F. Oil 9 x 13 pyrex with coconut oil or butter.
Whisk eggs, applesauce, brown sugar, and vanilla until smooth.
Stir in cinnamon, salt, and baking powder, then add oats and milk.
Gently fold in blueberries and spread in prepared pyrex.
Bake for 23-35 minutes until oatmeal is browned and not jiggly in the center.
Cool slightly before serving.
Serve with 100% maple syrup and top with plain yogurt or fruit if desired.
