Ingredients
  

  • 1 whole chicken about 4-5 lbs or 1.8-2.3 kg
  • 1/2 cup 120 ml clarified butter (ghee)
  • 1 tbsp 15 ml sea salt, or to taste

Optional herbs for those including spices:

  • 1 tsp 5 ml dried rosemary
  • 1 tsp 5 ml dried thyme
  • 1 tsp 5 ml dried sage

Instructions
 

  • Prepare Herb Butter: In a small bowl, mix the clarified butter with sea salt and optional dried herbs until well combined.
  • Season Chicken: Remove any giblets from the chicken and pat dry with paper towels. Rub the herb butter mixture both under and over the skin of the whole chicken, ensuring it is evenly coated.
  • Cook: Place the seasoned chicken breast side up in the slow cooker. Cover and cook on low for 6-7 hours, or until the chicken is cooked through and the meat falls off the bone.
  • Optional Browning: For a crispy skin, carefully transfer the cooked chicken to a broiler-safe pan and broil for 3-5 minutes or until the skin is golden and crispy.
  • Rest and Serve: Let the chicken rest for 10 minutes before carving to allow the juices to redistribute. Serve warm.
