Keto Coconut Macaroons
Ingredients
- ¼ cup superfine almond flour
- ½ cup shredded unsweetened coconut
- 2 tablespoons monk fruit sweetener
- ½ tablespoon almond extract
- 1 tablespoon coconut oil
- 3 egg whites ⅛ teaspoon salt
Instructions
- Preheat oven to 400°Line a baking sheet with parchment paper.
- In a bowl mix almond flour, shredded coconut, salt, and monk fruit sweetener.
- Melt coconut oil in a saucepan over medium heat. Remove from heat and add almond extract.
- Slowly add the melted coconut oil to the flour mixture. Mix until well combined.
- In a separate bowl, whisk the egg whites until stiff peaks form.
- Fold the egg whites into the flour mixture slowly, making sure not to over mix.
- Drop spoonfuls of the mixture onto the cookie sheet. Bake for 8 minutes or until golden brown.
- Allow cooling before removing from the baking sheet.
