Ingredients
  

  • ¼ cup superfine almond flour
  • ½ cup shredded unsweetened coconut
  • 2 tablespoons monk fruit sweetener
  • ½ tablespoon almond extract
  • 1 tablespoon coconut oil
  • 3 egg whites ⅛ teaspoon salt

Instructions
 

  • Preheat oven to 400°Line a baking sheet with parchment paper.
  • In a bowl mix almond flour, shredded coconut, salt, and monk fruit sweetener.
  • Melt coconut oil in a saucepan over medium heat. Remove from heat and add almond extract.
  • Slowly add the melted coconut oil to the flour mixture. Mix until well combined.
  • In a separate bowl, whisk the egg whites until stiff peaks form.
  • Fold the egg whites into the flour mixture slowly, making sure not to over mix.
  • Drop spoonfuls of the mixture onto the cookie sheet. Bake for 8 minutes or until golden brown.
  • Allow cooling before removing from the baking sheet.
