Ingredients
  

  • 2 cups almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ finely chopped almonds
  • ½ cup butter
  • cup monk fruit sweetener
  • 1 egg
  • cup full-fat ricotta cheese
  • 1 teaspoon almond extract

Instructions
 

  • Preheat oven to 350°Line a baking sheet with parchment paper.
  • Mix together the wet ingredients.
  • In a separate bowl, combine all of the dry ingredients. Slowly add the dry ingredients to the wet ingredients until a dough forms.
  • Drop spoonfuls of cookie dough onto the baking sheet.
  • Bake for 15 to 18 minutes until lightly browned.
  • Allow cooling completely before serving.
