Keto Almond Ricotta Cookies
Ingredients
- 2 cups almond flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ finely chopped almonds
- ½ cup butter
- ⅔ cup monk fruit sweetener
- 1 egg
- ⅔ cup full-fat ricotta cheese
- 1 teaspoon almond extract
Instructions
- Preheat oven to 350°Line a baking sheet with parchment paper.
- Mix together the wet ingredients.
- In a separate bowl, combine all of the dry ingredients. Slowly add the dry ingredients to the wet ingredients until a dough forms.
- Drop spoonfuls of cookie dough onto the baking sheet.
- Bake for 15 to 18 minutes until lightly browned.
- Allow cooling completely before serving.
