Turkey and Bell Pepper Stir-Fry

Ingredients
  

  • 6 oz turkey breast cut into small pieces
  • ½ t garlic powder
  • ½ t onion powder
  • 2 T olive oil divided
  • 1 yellow onion diced
  • ½ green bell pepper cut into thin strips
  • ½ red bell pepper cut into thin strips
  • ½ yellow bell pepper cut into thin strips
  • 1 t red wine vinegar
  • 2 T tomato paste
  • Sea salt to taste
  • 1 T chopped fresh parsley

Instructions
 

  • Season the turkey breast with the garlic powder and onion powder.
  • In a large skillet, heat 1 tablespoon of the olive oil over medium-high heat. Add the turkey and cook on all sides for 5 to 6 minutes, or until cooked through. Remove the turkey from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon olive oil. Add the onion and cook for 1 minute. Add the peppers and cook for 3 to 4 minutes, or until they begin to soften.
  • Add the vinegar and cook for 30 seconds. Stir in the tomato paste. Return the turkey to the skillet and cook for 5 minutes, or until the peppers are tender. Season to taste with sea salt.
  • Top with the parsley before serving.
